My daughter will try anything green. Won’t touch grape or strawberry jelly to save her life, but if it’s green… she’ll pop it into her mouth without hesitation. I’m not complaining, but this makes no sense to me.
Lately I’ve been struggling with what to feed her for lunch, beyond peanut butter toast. She is in a very picky phase and I’m not the most creative of individuals. So it’s a struggle, like it is for most parents of toddlers. Enter pesto.
I took a gamble the other day and made some pesto. I put a dollop over some warm pasta. She looked at it with that quizzical look of hers and sure enough took a bite! I was so excited when she even wanted more! So I’ve been taking advantage of this by making more pesto. Today we tried Spinach Pesto and it was also a success! Give it a try. It’s so easy, you can’t go wrong. I enjoy it, she enjoys it. It’s a win, win.
- 1 cup packed baby spinach
- 1/4 cup toasted sliced almonds
- 1/4 cup grated parmesan
- 1/2 tsp salt
- 1 garlic clove
- 1 tablespoon lemon juice
- 1/3 cup olive oil
Place all ingredients, except olive oil, into bowl of a food processor. Pulse several times. Turn processor to 'on' position and drizzle in olive oil. Process until smooth.
Serve over pasta, chicken, or fish. Can be frozen in ice cube trays and pulled out as needed.
