Slice each piece of gluten-free bread into three strips about 1-inch thick.
In a shallow dish, whisk together the eggs, milk, and vanilla.
In another shallow dish, whisk together the granulated sugar, brown sugar, and cinnamon. Set aside.
Heat a non-stick skillet over medium heat. When hot, melt a small pat of butter in the pan.
Dip both sides of the bread in the egg mixture and place in the hot pan. -Don't soak the bread, dip each slice quickly right before placing in the pan.-Don't overcrowd the pan, work in batches.
Cook the french toast sticks for 2-3 minutes on each side, or until golden brown.
Remove the sticks from the pan and immediately roll in the cinnamon sugar mixture to coat both sides while the french toast sticks are still warm.
Repeat steps 4-7 with remaining bread.
Serve french toast sticks immediately, while still warm.
