Add the dark brown sugar, water, quartered apple, and cinnamon stick to a small saucepan.
Bring to a simmer over medium heat.
Cover and let simmer for 15-20 minutes, stirring occasionally, or until the apple is soft and mushy.
Remove from heat and let cool before straining into a glass jar.
Store in the refrigerator for up to two weeks.

1 "pump" of Starbucks syrup is approximately 1 tablespoon.To use apple juice concentrate: Omit the apple. Decrease water to ½ cup and substitute ¾ cup apple juice concentrate for the apple. Follow remaining directions above.
