Ingredients

gluten-free rotini pasta
Barilla preferred

cup
basil pesto sauce
store-bought or homemade
10
ounces
cherry tomatoes
halved
8
ounces
fresh mozzarella cheese pearls
½
cup
shredded parmesan cheese
½
cup
pine nuts
toasted
¼
cup
fresh basil
sliced or torn
Instructions
In a large pot of boiling water, cook the pasta according to package directions. Drain and rinse well.
Add the drained pasta to a large serving bowl along with the pesto, cherry tomatoes, mozzarella cheese, parmesan cheese, and pine nuts.
Gently toss to combine the ingredients.
Garnish with fresh, torn basil and extra parmesan cheese, if desired.
Serve immediately at room temperature.
Notes
As the pasta salad sits, you may find it absorbs the sauce. Add more pesto sauce as needed to your desired tastes.
