I love using store-bought gluten-free flour blends. They are consistent, easy to use, and convenient. But there are times when I've had to make a flour blend from scratch.
Like when I've run out of a particular blend and still want to bake those gluten-free peanut butter cookies, or when a company changes their beloved formulation, like when Cup4Cup removed the milk powder so I created my own version of the Cup4Cup blend to add the milk powder back in.
If you have a stocked gluten-free pantry, you might have all of these ingredients already on hand, which makes it easy to whip up a small batch and quicker than running to the grocery store. Not to mention, it's usually cheaper to make from scratch.
What is Bob's Red Mill 1:1 Gluten-Free Flour?
Bob's Red Mill 1:1 flour is a commercial gluten-free flour blend that was designed to replace wheat flour in equal amounts, or 1-to-1, in most recipes. It is a proprietary blend of sweet rice flour, brown rice flour, tapioca starch, sorghum flour, potato starch, and xanthan gum.
It is arguably one of the most popular gluten-free flour blends on the market, and can be found in almost every grocery store. It's a go-to for many because it is so versatile and works well in most baked goods.

Whenever I want to mimic a flour blend, I look at the ingredient list and the nutritional analysis and then reverse engineer the recipe to get it as close to the original as possible. Based on that, I think this is as close as you can get to Bob's with a homemade blend.
I've tested this flour on various cookies, cakes, and muffins, including these gluten-free sourdough discard banana muffins; it is working just as well as the original Bob's Red Mill blend.
For the best results and to avoid a grainy texture, use superfine rice flours. Make sure to look for labels that specifically mention 'superfine' when shopping, as this indicates they are very finely ground. This small detail is often missed and can make a huge difference in your recipes.

In order to accurately measure the ingredients for this flour bend, you will need a digital kitchen scale. Most kitchen scales will work for larger measurements, but for smaller quantities, you need to have a scale that can accurately measure down to 0.01 g, which this one does.
Precision is key, especially when making a gluten-free flour blend and I will not be providing U.S. cup-based measurements for this recipe.
